Introduction:
Tiger rice / Pulihora, also known as tamarind rice or lemon rice, is a traditional South Indian dish bursting with tangy flavors and aromatic spices. Follow this authentic recipe to prepare delicious Tiger rice / Pulihora that will tantalize your taste buds and leave you craving for more.
Ingredients:
- 1 cup Aishwarya Dampudu Biyyam Quality Rice
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon chana dal (split chickpeas)
- 1 teaspoon urad dal (split black gram)
- 2-3 dried red chilies
- 10-12 curry leaves
- 1/4 cup peanuts
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon asafoetida (hing)
- 2 tablespoons tamarind pulp
- Salt to taste
- 2 tablespoons chopped coriander leaves (for garnish)
For Tiger rice / Pulihora Masala:
- 2 tablespoons grated coconut (fresh or desiccated)
- 1 tablespoon sesame seeds
- 1 tablespoon roasted peanuts
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 dried red chili (optional)
- 1 teaspoon oil

Instructions:
1. Wash Aishwarya Dampudu Biyyam Quality rice thoroughly and cook it using your preferred method until each grain is separate and fluffy. Spread the cooked rice on a plate to cool down.
2. Dry roast all the ingredients listed under tiger rice / pulihora Masala (grated coconut, sesame seeds, roasted peanuts, cumin seeds, coriander seeds, and dried red chili) in a pan until they turn aromatic. Allow them to cool, then grind them into a coarse powder using a grinder or mortar and pestle.
3. Heat oil in a pan or kadhai over medium heat. Add mustard seeds and let them splutter.
4. Add chana dal, urad dal, dried red chilies, and peanuts. Sauté until the dals turn golden brown and peanuts are roasted.
5. Add curry leaves, turmeric powder, and asafoetida. Sauté for another minute.
6. Lower the heat and add the prepared tiger rice / pulihora Masala powder. Mix well and cook for a minute to let the flavors blend.
7. Add tamarind pulp and salt to the pan. Mix everything together and cook for 2-3 minutes until the mixture thickens slightly.
8. Turn off the heat and add the cooked rice to the pan. Gently mix the rice with the spice mixture until it is well coated. Be careful not to break the rice grains.
9. Taste and adjust salt if necessary. Garnish with chopped coriander leaves.
10. Allow the tiger rice / pulihora to rest for 10-15 minutes to let the flavors meld together.
11. Serve tiger rice / pulihora warm or at room temperature with your favorite accompaniments like papad, pickle, or yogurt.
